Enjoy this combination of garden-fresh vegetables and gnocchi–a simple Meatless Friday dinner that’s on the table in a flash.
In a large pot, boil gnocchi in salted water until it floats on top of water. In a skillet, saute vegetables in olive oil until heated. Drain gnocchi and place into skillet with vegetables. Season to taste.
Cooking time: 15 minutes
