Upside down Pizza

Makes 8 servings


  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 14-ounce jar spaghetti sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vegetable oil 1 cup flour
  • 1/2 teaspoon salt


1. In a large skillet, cook beef and onion over medium heat, until the meat is no longer pink. Drain.

2. Add spaghetti sauce. Cover and simmer until heated through.

3. Pour into a greased 13×9 inch baking dish.

4. Sprinkle with cheese.

5. In a blender combine the milk, eggs, oil, flour and salt. Cover and process until smooth. Pour over casserole.

6. Bake, uncovered, at 400 degrees for 25-30 minutes or until golden brown.

Serve with Tossed Green Salad

Strawberry Jam Bars

Makes 12 servings


  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1 egg
  • 1 18 1/4-ounce box white (vanilla) cake mix
  • 1 cup finely crushed cornflakes
  • 1 cup strawberry jam


1. In a mixing bowl, cream butter and brown sugar until smooth.

2. Add egg and mix well.

3. Gradually add dry cake mix and cornflakes. Set aside 1 1/2 c. for topping.

4. Press remaining dough into a greased 13×9 inch baking pan.

5. Carefully spread jam over crust. Sprinkle with reserved dough. Gently press down.

6. Bake at 350 degrees for 30 minutes or until golden brown. Cool completely on a wire rack. Cut into bars and serve.
