  1. Since she was a toddler, my daughter has loved the “Green Rice” I fix. She asks for it often, even though she’s a teenager now. It doubles easily.

    Green Rice
    1 6oz box Near East brand rice pilaf, prepared according to package directions
    8 oz fresh or frozen chopped baby spinach (I use half a 16oz bag of chopped, frozen spinach)
    1 5oz can drained tuna or salmon (can substitute canned chicken etc. on meat days)

    While prepared pilaf is still hot, add the fish and spinach, stir and cover for 5 minutes. No need to thaw spinach if frozen, the heat from the pilaf is enough. You can sprinkle with sliced almonds to garnish, if you wish. Serves 4 as a side, 2 as a main dish. Your mileage may vary.
