Barbara Stein notes, “It only makes sense that if you’re going to the trouble of cooking a homemade meal — even one as easy as Cheese Enchiladas
— you should go ahead and double or triple it and stash some away for a rainy day (or a day with multiple lessons and practices, or just one when you can’t fathom mustering up the energy to cook). You’re dirtying dishes now — don’t dirty them another night as well. And while you’re grocery shopping pick up some aluminum pans to make clean up super easy.”

Abby Brundage confesses, “Pasta. A big bowl of pasta. It’s my guilty pleasure. I’m not partial. It can be covered in butter, salt & pepper. Bolognese sauce. Pesto. I’m an equal opportunity noodle consumer. So if I’m trying to eat a little healthier, I know I have to cut back on the pasta. Enter: spaghetti squash! I’m not going to say that if you’re a noodlephile like me that you won’t notice a difference, but it’s actually pretty good! Give it a try in this Spaghetti Squash Shrimp Scampi

True Confessions from Erin McCole-Cupp: “Maybe this never happens to you, but some of our favorite meatless Friday recipes have been created because, well, Mommy forgot to take the fish out of the freezer to thaw. Easy-Does-It Savory Potato Galette
is one of those. I pinned a few ideas for savory galettes, but they all seemed a little too fussy for the amount of time I have on my hands of a Friday. So we experimented with this, and … success!”

More True Confessions, this time from Deanna Bartalini: “My favorite part of this recipe is the sauce. I make it all the time; seriously, there is some in my refrigerator on an almost continual basis. It is good on anything, from fish to turkey burgers to crackers to veggies to cold shrimp. Full truthful disclosure, I like to eat it off the spoon. Here we go: Fish Tacos with Cabbage Slaw
