Edamame Avocado Dip

Yesterday was trash day, so naturally I prepared to go through my fridge and discard all the items that were either on the verge of spoiling or already spoiled. I was unsure what to do with the two heads of cabbage that had arrived in the CSA box for two weeks in a row. We had already made every dish imaginable, stuffed cabbage rolls, cabbage perogies, braised cabbage, and cabbage soup. I was seriously considering making sauerkraut, but did not want to babysit a jar of sauerkraut for weeks. So I decided to THROW IT AWAY! Before I actually got to throwing it away, I got distracted and starting looking at my phone, where I proceeded to find a link to Pope Francis’s most recent audience where he said, ” Note well, though, that the food we throw away is as if we had stolen it from the table of the poor or the hungry!”

Noooo!! I couldn’t throw it away now. I just couldn’t. Suddenly, I remembered that I was supposed to take a salad to the end of the year picnic at my son’s preschool. Then it just hit me, coleslaw!! So there you go. One small sentence changed everything for the better.
