Meatless Friday Roundup: Farmer’s Market Edition

broccoliIt’s just about the end of the season for farmers’ markets now that autumn has arrived, so for this week’s Meatless Friday feature, we’ve chosen three recipes that use fresh seasonal produce. Enjoy garden-fresh vegetables while you can!

Vegetable Kabobs can be a meal all by themselves; they also make a terrific side dish for anything you’re cooking on the grill.

Angy Penne is all about the sauce, not the pasta. Fresh, ripe tomatoes give this sauce its distinct flavor. You can also serve this sauce with cheese ravioli or tortellini as well as just about any kind of pasta. Why not let the kids choose their favorite shape?

Lemon Broccoli Pasta features a vegetable that many kids love to eat. If you’re serving toddlers, we suggest substituting elbows or bow-tie pasta for the angel hair; it’s a good way to keep the food out of their hair!
