Microwave Ham and Noodle Medley

Makes 4 servings

Ingredients:

* See note below.

  • 4 ounces fettuccini pasta uncooked
  • 1 1/2 cups mixed vegetables frozen,
  • 1 cup ham 1/2 -inch cubed cooked
  • 1 4-ounce can mushrooms sliced, drained
  • 1/2 teaspoon Italian seasoning dried crushed
  • 1 cup Basic White Sauce
  • 1/4 cup Romano cheese grated

* Cooking Time: 12 minutes Power: 100% (700 watts) Standing Time: 2 minutes

Instructions:

1. Cook noodles in boiling water according to package directions. Drain and set aside (you will need about 2 cups cooked).

2. Meanwhile, place frozen vegetables in a large microwavable bowl. Cover with a glass lid or plastic wrap, turning one edge back. Microwave at 100% power (700 watts) for 3 minutes. Drain if necessary. Add ham, mushrooms and Italian herbs. Toss lightly to blend. Stir in 1/2 cup of the sauce; set aside.

3. Place noodles in a shallow 2- quart microwavable dish. Stir remaining 1/2 cup sauce into noodles.

4. Spread vegetable mixture over noodles, pressing ham cubes into sauce. Cover with a glass lid or plastic wrap, turning one edge back. Microwave at 100% power for 9 minutes or until heated through.

5. Sprinkle with cheese. Cover and let stand for 2 minutes before serving.

Serve with green salad.

Easy Ice-Cream Pie

Makes 6 servings

Ingredients:

  • 1 graham cracker pie crust, any flavor
  • 1/4 gallon ice cream, any flavor
  • 1 jar any flavor ice-cream topping

Instructions:

1. Set ice cream out to defrost for 20-30 minutes

2. Fill pie crust with ice-cream

3. Top with topping

4. Freeze for at least an hour before serving.

Favorite combos:

  • Chocolate Crust with Choc. Chip Mint / Mocha Almond Fudge Ice Cream and Hot Fudge
  • Shortbread Crust with Strawberry Ice Cream and Topping
  • Regular Graham Cracker crust with Vanilla Ice Cream and Caramel
