Simple Mini Pizzas

Makes 6 servings

Ingredients:

  • 1 tube large refrigerated biscuits
  • 1 jar pizza sauce
  • 2 cups shredded mozzarella cheese
  • Pizza toppings of choice – pepperoni, vegetables, etc.

Instructions:

1. On a lightly floured surface roll out each biscuit to a 4″ circle.

2. Spread a small amount of pizza sauce on each biscuit

3. Top with cheese and toppings as desired. Place on lightly greased baking sheets.

4. Bake at 375 degrees for 10-12 minutes or until cheese is melted and biscuits are lightly browned.

Serve with Tossed Green Salad

Almond Fudge Pops

Makes 6 servings

Ingredients:

  • 1 envelope whipped topping mix
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup hot fudge ice cream topping
  • 2 tablespoons water
  • 1 cup finely chopped almonds divided
  • 6 plastic cups (3 ounce)
  • 6 Popsicle sticks

Instructions:

1. In a mixing bowl, beat the topping mix, milk and vanilla on low speed until blended. Beat on high until soft peaks form – about 4 minutes.

2. In a large bowl, combine the fudge topping and water; fold in the topping mixture and 1/2 cup of almonds.

3. Pour into plastic cups. Cover with heavy duty foil; insert sticks through foil. Place in a 9 inch square pan.

4. Freeze until firm. Remove foil and cups. Roll the frozen pops in remaining almonds.
