Meatless Friday: Vegetable Pie

If you think your blender is only good for making milkshakes and margaritas, think again! Use it to make the dough for this meatless dinner dish.

Vegetable Pie

pie FlaviaIngredients for the pastry
6 tablespoons of white flour
4 eggs
2 tea cups of milk
1 tablespoon of yeast
1 tea cup of oil
1 teaspoon of salt
1 tablespoon of grated parmesan cheese

Ingredients for the filling
1 small can of corn, drained
1 small can of peas, drained
1 medium chopped onion
2 medium tomatoes with no seeds, chopped
6 sliced olives
1 tea cup of sliced parsley
1 teaspoon of salt
1 teaspoon of oregano
2 teaspoons of olive oil
1/2 squeezed lemon

Mix all the ingredients for the filling and reserve them. Mix all the ingredients for the pastry in the blender, then put half of the contents in a medium sized glass baking dish, previously greased with oil and sprinkled with flour. Then spread the filling evenly in the baking dish. At last, pour the rest of the pastry on top. Bake at medium temperature (about 350°F) for about 25 minutes.

I love it that this recipe calls for “a teacup of” milk, oil, and sliced parsley, but I am wondering, just how much is a “teacup of?” Since teacups are generally smaller than mugs, I’m thinking a teacup equals about a half cup? But in the case of the milk, which calls for TWO teacups, the actual amount is quite important to know, since TWO are called for! Also the oil! We could have some really runny batter if we are not careful!

    Also, is there anything in this recipe that makes it specifically “Brazilian?” I would love to say “this is Brazilian cuisine” but then I would want to know what makes it so special . . .

    Also how much is a “small can of” corn, peas, etc. Is a “small can” in Brazil a different size than in the US? We have a lot of produce from our garden at the moment and this would make a delicious dish for the family! Thank you for posting!

      I will try to answer your questions: first I measured the ingredients with “teacups”, because our sistems are differents, so I thought it would be easier, but now I´ll give you the exact measures, I hope you can “translate” them…
      One teacup is about 200ml (7 oz??). The most important thing is to use the same measure for all ingredients. Here I actually use a teacup and measure the oil, milk and parsley.
      About the small can, is also 200g (7 oz??) drained.
      I can´t say anything from this recipe is actually “Brazilian” except that I´ve learned here in Brazil… So you can say you´ve learnt from a Brazilian…
      But I will send some real Brazilian cuisine recipes. Keep an eye on the Meatless Fridays recipes for the next weeks!
