*If your kids do not care for mushrooms and onions (mine don’t) – just serve the chicken and cheese – or add lettuce or tomato if desired

Ingredients:

  • 12 ounces boneless skinless chicken breast halves cut into strips
  • 1 envelope dry Italian salad dressing mix (or Caesar)
  • 1 cup sliced fresh mushrooms
  • 1/2 cup sliced red onions
  • 1/4 cup olive oil
  • 4 submarine sandwich rolls split and toasted
  • 4 slices Swiss cheese

Instructions:

1. Place chicken in a bowl; sprinkle with the salad dressing mix.

2. In a skillet, sauté the mushrooms and onion in oil for 3 minutes.

3. Add the chicken and sauté for 6 minutes longer or until chicken juices run clear.

4. Spoon mixture onto roll bottoms; top with cheese.

5. Broil 4″ from the heat for 4 minutes or until cheese is melted. Add Sandwich tops and serve.

Serve with Caesar Salad.
